This is a simple variety of flat focaccia from Liguria that features two paper-thin sheets of dough encasing tiny dollops of salty Stracchino cheese. Think of it as a kind of bubbling piadina.
The version made by Crosta & Mollica currently on sale at Selfridges is impossibly good. As you tear off a second slice, melted cheese and olive oil drip down your fingers and you are left with a slight salted tingling on the edge of your lips. Go and buy some hot.
