Chef's table: Andrew Dargue

Andrew Dargue, owner and head chef at the vegetarian restaurants Orchard and Vanilla Black in Holburn and Chancery Lane

Where would you pay money to eat and how often? “We do like Nopi (21-22 Warwick Street, W1B). What he does is really clever. He does some really good quality food. That’s the main emphasis.”

Why? “What we like is the quality. And it’s interesting. We’re both vegetarian but it’s nice to go somewhere that suits us both.”

Who would you take? “My wife. She drags me round. We’re always looking for new ideas”

What do you eat there? “I was annoyed because he did strawberry with sumac. It was almost like Eton Mess. The reason I was annoyed about it was because it was so good. I thought, why didn’t I think of that?! Last time I was there was a pea and broad bean fritter. It was summery and cooked nicely – crispy on the outside, soft on the inside.”
