“With the power of suggestion she got me to move around the cellar where certain countries were kept, doing so allowed the other man to be out of sight, just long enough to line his pockets with lots of wine.”
He added that the man seemed to move “stiffly”, as though unable to bend his torso, and that the woman cut short their conversation the moment he reappeared.
As the trio climbed the stairs, Mr Borel noticed several bottles had been swapped for cheap screw-top replacements and immediately raised the alarm.
Waiter Matthew Leader chased the pair as they sprinted to their SUV roughly 100 yards away. He caught the woman, but the man managed to get behind the wheel and sped off — with Mr Borel briefly leaping into the open passenger door in an attempt to stop him.
Two bottles, a 2019 Échézeaux and a 2021 Grands Échézeaux, were later recovered on nearby grass. The remaining six, valued at around $41,500 (£31,500), are still missing.
Ray reportedly told staff she had been abducted by the man after meeting him on a cruise and was forced into taking part in the heist.
Originally from the Midlands, Ray has three sons and previously ran the Bay View Hotel in Herne Bay. Her LinkedIn profile says she holds a Creative Writing degree from Canterbury Christ Church University and has worked as a freelance writer.
She is being held at Northwestern Regional Adult Detention Centre and is due in court on December 3.
