Because of this, we have spent a lot of time discussing the Tart philosophy and what we think food is all about. Although we have been cooking for six years, it’s quite hard for us to define what the vibe of our food is. It’s so easy to say the usual: seasonal and healthy, fresh, good quality produce, ethically sourced and colourful with attention to texture. That’s true to an extent, of course, as we do focus on presentation and flavour, but what really excites us and makes us happy is taking influence from food we’ve enjoyed on our travels. Dishes with exotic ingredients and spices, dishes with attitude and creativity, dishes that elevate produce to an exciting new level — that kind of dish is memorable.
