Steve Groves knows a fair bit about being under pressure.
Not only from his role leading the kitchen at Michel Roux Jr’s restaurant Roux at Parliament Square, but also from his stint as a contestant on MasterChef: The Professionals — which he won in 2009.
More recently he’s been taking on a judging role. As the latest bout of contestants competed for the crown they did a shift at the Roux at Parliament Square kitchens, where Steve judged their abilities and presentation as they whipped up a rather complicated mackerel dish.
In a bid to see just how hard it could be to cook and plate-up a dish of this standard, I also paid Steve a visit in the kitchens, where he put me through my paces. After a demo of how the mackerel dish should be made, it was my turn.
