Taste assessment: Sushi, if you’re handy with chopsticks and don’t get the dressing everywhere, is pretty well perfect desk food. Tsuru’s offering is a pleasant assembly of seared salmon, halved prawn and a couple of asparagus spears, over a green salad and rice. Asparagus isn’t the obvious Japanese ingredient but it works fine. The fish is fresh. And they say the salmon is sustainably farmed. The ratio of cucumber to seaweed is biased in favour of the cucumber, but then I have a thing about seaweed.
