Preheat the oven to 200C/Gas Mark 6. Pour the oil into a large, non-stick baking tray and put it in the oven to heat. Bring a pan of salted water to the boil. Peel the sweet potatoes and cut lengthways into 5mm slices. Cook for one minute in the boiling water. Pat dry and toss into the hot oil. Roast for 20 minutes, turning once, until they are golden brown. When they are cooked, set aside on kitchen paper or a wire rack.
