The Mexican-meets-Japanese restaurant’s Hispanic leaning desayuno (that’s brekkie in Spanish) has all bases covered. In full view of the intriguing neon shrine to Yoda, it’s now possible to devour classic Mexican chilaquiles featuring tortilla chips fried in salsa with chorizo, black beans, cheese, fried eggs, guacamole, jalapeños and a dollop of chipotle cream, as well as the Cabo taco, a corn tortilla topped with a thick crust of crispy, scrambled eggs and punchy pico de gallo, if you dare. Meanwhile, there’s also ancho and guajillo chilli spiced pork al pastor served with poached eggs, hash browns, habanero salsa and pico de gallo, as well as the resaca quesadilla, containing chorizo, bacon, cheese, spring onions and red salsa accompanied by a pair of fudgey fried eggs.

Those with a sweet tooth should make a beeline for the duet of cinnamon-speckled churros and decadent cup of Mayan hot chocolate made with cinnamon, chilli and rice milk, which will have you fighting over the last straw. And finally, don’t leave without trying the Sake Maria, starring sake, tomato juice, habanero salsa, salt, pepper and a secret Mexican-Japanese spice rim. Vamos!
