Stereotypically laid-back Australian chef Brett Redman, 31, set up his first café, Elliot's, named after the street he grew up on, in 2006 in Bethnal Green, after moving to London 'on a whim'. 'It was an awful idea; I didn't understand the reality of doing it at all.' It was there that he met his current business partner Rob Green, 34, a social worker turned Borough Market trader, who was a regular. Together they ditched the original Elliot's, and set up the Pavilion Café in Victoria Park in 2007, which is now an East London favourite serving tasty lunches such as tortilla and pecorino salad. In August they opened a new Elliot's in a rough-and-ready exposed-brick space on Stoney Street in Borough, which offers charcuterie dining along with larger dishes such as partridge or sea bass.
