Nevertheless it's been a rollercoaster ride. Two years after she won Masterchef, businessman Mark Selby approached her with a British restaurant idea. He already had half the money in place, but he wanted her input. Miers persuaded him to be more adventurous: what London really lacked, she argued, was an authentic Mexican restaurant. "Nobody has ever taken Mexico seriously. Everyone tends to think of Tex Mex, hangovers, bad tequila, greasy, heavy dishes that are bad for you. But when I went there I met the most incredible chefs. The whole culture is steeped in food and recipes, just like Italy."
