The site, for anyone who fancies jacking in their job for the joys of running a pub, is due to go live this autumn, with the procurement side coming on stream next year.
But virtual markets do not need to be neutral along the lines of pubowner.
Says Bradshaw: "The debate is still open on whether it is better to go for an independently operated exchange or one which is controlled by the companies in the main market.The only thing that matters is how much liquidity there is.
With a market worth £100 billion across Europe, the big hotel groups are betting on the latter option.
Whitbread, Hilton and their partners want to cut costs. A Whitbread spokesman says: "Moving to e-purchasing is about more efficient, cheaper faster services."
He estimates Whitbread could cut £500,000 a year from the supply chain.
The site, which would bring together the hotels' suppliers and customers, would, according to Whitbread, "sig-nal the start of a new era in the sector".
How much it will cost to set up the site and who will run it is still being debated. The business plan is due to be completed this autumn.
But if the exchange, which they hope to launch next year, is successful, more groups will be invited to join. Eventually, the jointly owned venture could be spun off as a separate company.
