But when it's good, it's seriously, sinfully, grown-up good: knockout thick-cut marmalade ice cream; banana yoghurt sorbet that friends swore was store-bought; and gin and tonic sorbet (8tsp gin, 500ml sugar syrup, 375ml tonic, an egg white, the juice of one lemon and rind to taste) with a juniper, palate-cleansing punch. Like a shandy lolly, only hangoverinducing. And proper, proper posh.
