How to make smoked salmon pâté with lemon & dill
Ideal as a light snack with some crispy bread or spread on crostini for a stylish starter.
This creamy smoked salmon pâté, with a hint of lemon, is so simple it can be whipped up in less than ten minutes.
Ingredients (serves 2)
250g full fat soft cheese
1 tablespoon Dijon mustard
1 teaspoon freshly grated horseradish (or equiv. creamed horseradish)
3 large spring onions, finely chopped
1 tablespoon chopped fresh dill
200g smoked salmon, roughly chopped
Zest and juice of 1 lemon
Salt
Freshly ground black pepper

Put all of the pâté ingredients into a food processor and pulse until mixed but still a little chunky. This can also be done in a bowl, just make sure you chop the salmon and dill finely before adding to the bowl. Taste and adjust the seasoning if necessary, add more lemon juice if a thinner consistency is desired.
Serve with crusty bread, warmed in the oven and a cucumber and radish salad.
