Easy weekday recipes: chorizo and potato bake

Try the simple recipe below for some weekday indulgence...

100g chorizo, thickly sliced

Small jar roasted red peppers, chopped into bite sized pieces

1 small onion, chopped into bite sized pieces

1 large potato, cut into 2cm cubes

2 garlic cloves, sliced

1 x 400g tin chopped tomatoes

1 teaspoon oregano

½ teaspoon salt

½ teaspoon black pepper

Dollop of sour cream

Preheat the oven to Gas 220C/425F/Gas 7.

Add all the ingredients except for the sour cream to a large mixing bowl and mix so that the chorizo and vegetables are completely coated in the spicy tomato mixture. Pour into an ovenproof dish, cover with foil and bake in the oven for 45 minutes to 1 hour.

Serve in bowls with a dollop of garlic mayonnaise on top and a hunk of crusty bread.
