Mode, who has since written for TV, says she always found the restaurant trade inherently theatrical. 'It's the final frontier for the rich,' she says. 'They've got everything. What they can't always get is a table at the city's top restaurant. No one has ever said no to them before and yet here is Mark, in his overalls, saying no.'
No one claims Fully Committed is serious: it's as light as a Ferran Adriâ¡ foam concoction. But it does strike a blow for the people paid peanuts in the service industry. 'The silly thing is that when the show started to sell out in New York, people jammed the phone lines at the box office, asking why on Earth they couldn't get a ticket,' Setlock says. 'Life started to imitate art.'
It's enough to put you off your dinner. Yet given the food is the least important thing on the menu at places like this, what's the secret of securing a table? 'Be nice,' says Setlock. 'It's more effective than all the threats in the world.'
